It’s been awhile since I posted anything so I decided to write about my ice skating/cross-country skiing adventure last weekend. After all, I snowboard and downhill ski (at least I used to downhill ski) so how hard could cross-country skiing be?
I’m sitting here on a beautiful snowless Sunday afternoon reflecting on yesterday and what a wonderful time I had creating an awesome meatless Thanksgiving Dinner with some wonderful friends.
This adventure started about 3 weeks ago when I decided I wanted to cook a Thanksgiving Dinner – Vegan Style. This was mostly to prove I could do it even though I had my doubts. The first thing I did was google Vegan Thanksgiving Dinner and came upon this wonderful site – http://www.vegkitchen.com/tips/vegetarian-thanksgiving/
At first it was overwhelming with so much to choose from. I finally settled on the following dishes:

The day started off normal, but at some point during the day, I told myself that I would eat like crap and wake up on January 1 “vegan”. It didn’t hit me to what that meant until I actually voiced that comment to a friend. “What am I saying?” “Am I actually going to be able to pull it off?” All things that went through my mind. After all, I’m not a cook, let alone a chef. “What do vegans eat?” “How do they survive?” “Are they able to go out to restaurants?”
